• Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation;• Soft crushing;• Long contact with a skin "maceration" (this is the time when the wine acquires its particular coppery colour);• The wine is then aged for 24 months on yeasts;
• After the bottling the wine aged in the bottle several months before to be release.
