• Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation;• Soft crushing;• 15 days of maceration in oak vats (this is the time when the wine acquires its particular coppery colour) and start the fermentation with indigenous yeasts;• The wine is then aged 24 months in oak barrels of 225 liters;• After the bottling the wine ages in the bottle about 6 months before to be release.
