Winemaking:

Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation;
De-stemming and soft crushing;
Depending from the vintage, from 10 to 15 days of maceration in oak vats (this is the time when the wine acquires its particular coppery colour) and start the fermentation with indigenous yeasts;
The wine is then aged in oak  and cherry barrels of 225 liters;
Bottling without filtration.
