The palate is expressed with notes very velvety, great structure and persistence
• Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation;• De-stemming and soft crushing;• 12 days of maceration in oak vats (this is the time when the wine acquires its particular coppery colour) and start the fermentation with indigenous yeasts;• The wine is then aged in oak barrels of 2nd passage of 225 liters;• Obtained with Solera method from the 2008 (70%) 2009 (5%) 2010 (5%) 2011 (5%) 2012 (5%) 2013 (5%) 2014 (5%) vintages;• The bottling (without filtration) was made in January 2015, and then the wine is aged in the bottle for a year before release.
